Escabeche
Fish Filipino Recipe

Escabeche is termed as whether a poached or a fried fish marinated in a sweet and sour mixture. It can also be prepared with spices and herbs in order to make it more delicious and attractive. Tilapia (my favorite!), red snapper or even mackerel would fit perfectly as the main ingredient of this Filipino Recipe or cuisine.

Here's my mother's special recipe for this Fish Filipino Recipe!

Remember this can be any kind of fish depending on what you like. We love it with tilapia.

Ingredients:

1 whole fish

1 pc. Ginger cut into strips

3tbsp. olive oil

1 cup cooking oil

1pc. onion diced

5 cloves of garlic chopped

1 tsp. black pepper

1 pc. bell pepper sliced

1 pc. onion cut into rings

1 pc carrot cut into thin strips

½ cup pineapple juice

½ cup vinegar

1tbsp brown sugar

1 tsp salt

1 tbsp. corn starch

1 tsp chili powder

1 tsp yellow food coloring powder(optional)

Cooking Direction:

Step 1: Dissolve food coloring powder in vinegar in a bowl. Then, set aside

Step 2: Dissolve corn starch in a separate bowl. Set aside.

Step 3: Fry the fish in the pan (use the 1 cup cooking oil)

Step 4: In a separate pan, saute garlic, wait for it until it turns brown then put ginger and onion.

Step 5: Add the vinegar with food coloring, salt, pineapple juice, black pepper, chili powder, carrots in a medium heat and allow it to boil.

Note: (add salt, pepper and sugar to taste)

Step 6: Add dissolved cornstarch and mix it for 30 seconds.

Step 7: Turn off the heat and add the bell pepper. Put extra garnishing as well.

Step 8: Serve and enjoy.

Typically, 2 pieces of big tilapia can serve about4-6 people. We love it with white hot rice!

Who can resist escabeche? I sure can't!
